- Coprire con pellicola e metterlo a lievitare in un luogo caldo per 2 ore circa.
- Riprendere l’impasto, oliarlo in superficie, oliare anche la teglia e versarne una parte. Lavorarlo con le dita unte e condire con passata di pomodoro, pachino tagliati a metà, olive verdi, sale, olio e origano.
- La variante: mettere l’altra metà dell’impasto nell’altra teglia. Farcire con passata di pomodoro, cipolla di tropea, pachino e olive nere, sale, olio e origano.
- Mettere in forno caldo a 190/200 ventilato per 35 minuti circa. I primi 15 minuti cucinare alternando le 2 focacce sul piano piu’ basso del forno. Quando saranno pronte basterà vedere se si staccano dalla teglia senza problemi. Servire le focacce e accompagnatele a un buon vino rosso…,un “Primitivo di Manduria.”
